Tea Tales
A white tea is dried tea. Undergoing no treatment and little handling, the leaves are allowed to wither, spread out in a clean area for a day or two and then dried further in the gentle heat of the sun. One of the earliest mentions of tea in the Western context, and topical to the making of white tea, was this reference to the drying process by the Jesuit missionary Matteo Ricci: “In spring, leaves are picked, dried in the shade and they keep them for their ordinary decoctions, which they almost always use in drinks, not simply at meals, but whenever a guest arrives to visit a friend.” With white tea, the special drying process without the heat of a wok results in a tea that is closest to the original green leaf, which may explain why white tea contains more antioxidants than other types of tea.
