Here, the tartness of strawberries is finely offset by a cream flavour. Andrew Boorde – English physician, failed monk and possible reluctant spy for Cromwell perhaps said it best about strawberries and cream: “Rawe crayme [cream] undecocted, eaten with strawberries is a rural man's banquet”. What better way to top off a banquet, rustic or otherwise, than with this luscious tea?

"Doubtless God could have made a better berry, but doubtless God never did." So said the 17th Century English Writer Dr. William Butler. This phrase was perhaps taken to heart by Madame Tallien, a prominent figure at the court of the Emperor Napoleon, who is well known for her unusual habit of bathing in the juice of fresh strawberries, using about 20 pounds per basin, supposedly as a restorative for her rosy complexion. Here at Language of the Leaf, we take our pleasures a little more simply and are inclined instead to use strawberries to flavour our tea.
